The Post-Mortem logo designates beers brewed with water matching the historic profiles of each style's city of origin. First, reverse osmosis is performed on Windsor municipal water - stripping it of its chemical and mineral content. The pure H2O is then rebuilt to match the water source that existed natively in the land where the specific style was incepted. Post- Mortem indicates a strict adherence to local to style-ingredients and historical techniques. We import the grains and hops from their homelands and propagate yeast from each style's original brewery.
This does not only show a departure from what we do with our main brewing practices, but also builds off of them. We learn from the dead at Post - Mortem. That's why we have built off the name. Post-Mortem is often referred to as an autopsy, searching for vital clues in the dead for what we should do next. That's where these beers come from.
